Weekend Breakfast - Biker Breakfast Muffins

They say you should breakfast like a King, lunch like a Prince, and dine like a pauper. I find this difficult. Firstly because as a mum of 2 under 5, sometimes the only breakfast I get is the discarded crusts of marmite on toast on my way out the door.
In a bid to do better (and stop me grabbing the biscuit tin after the school run) I have bought myself a box of Waitrose’s Red Fruit Toasted Rice & Wheat Flakes I’ve had it pretty much every morning for the past 10 days or so, but at the weekend a bowl of cereal just doesn't quite hit the spot.
You may recall my rather recent delve into the world of The Hairy Dieters Fast Food; with the granola recipe I shared last week. On Sunday my gorgeous hubby was off so we decided to try one of the more weekendy breakfast recipes: The Biker Breakfast Muffins.
Now if there’s something thats a real naughty breakfast treat for me then it’s McDonald’s Sausage & Egg McMuffin. I. LOVE. And the Sausage Egg & Cheese Bagel is pretty special too. Imagine my disappointment when I rocked up at the Gerona Airport branch of the golden arches last Monday only to discover they don’t do the breakfast range.
So, Sunday morning, chill playlist from Apple Music on the speaker, we set about making the recipe. It said you could either use high-meat content sausages or make the patties yourself with chicken or turkey mince, and as we had some in the fridge, we decided to do that.
I make a lot of burgers, and probably 4 years ago I invested in a burger press. I say invested. I think it was 99p off eBay. It’s the same as this one here for £1.49:
So the recipe: (Makes 4)
4 high-meat content sausages
4 slices reduced fat cheese
low-cal spray oil
4 eggs
4 english muffins
Chicken / Turkey Patties:
250g minced lean turkey/chicken
1 rasher smoked back bacon, fat removed, diced finely
1tsp dried sage
1tbsp tomato puree
Salt & Pepper
So first we mixed the ingredients for the patties and used the burger press to make them into patties. They were about 5mm thick once pressed.
We used a griddle pan on a high heat and when it was smoking hot we put the patties on. Cook them for 3 minutes on each side, and add the cheese for the last minute.
Whilst the patties are cooking halve your muffins and whip them into the toaster.
Fry the eggs in a frypan sprayed with the low-cal oil.
Build your muffins: Bottom, patty, egg, top. Bingo.
As it was just me and my gorgeous hubby, we had 4 patties, so I did open muffins with a patty on each half and an egg on one. I was stuffed. One patty would have been enough. It was lovely.
